Material:

To make approximately 25-30 chaklis, you will need the following ingredients:


- 2 cups rice flour

- ½ cup urad dal flour (black gram flour)

- 2 tbsp butter or ghee

- 1 teaspoon cumin

- 1 teaspoon sesame seeds

- 1 teaspoon red chili powder

- ½ tsp asafoetida

- salt to taste

- water as required

- oil for frying


Equipment:

- Chakli Maker (Also known as Murukku Press)

- large mixing bowl

- frying pan

- slotted spoon

- kitchen paper towels


Instruction:


1.Prepare the dough:

     - In a large bowl, mix rice flour, urad dal flour, cumin, sesame seeds, red chili powder, asafoetida and salt. Mix well to ensure even distribution of spices.

     - Add butter or ghee to the flour mixture. Using your fingers, rub the butter into the flour until it resembles breadcrumbs.

     - Gradually adding water little by little, knead the mixture into a smooth and stiff dough. The dough should not be too soft or too hard. Adjust water accordingly.


2.Prepare Chakli Maker:

     - Select the desired size disc to make chakli in your chakli maker. Place it on the bottom of the chakli maker as per the manufacturer's instructions.

     - Fill the prepared dough in the chakli maker. Make sure not to overfill the dough so that it comes out easily.


3.Shape the chakkis:

     - For deep frying, heat oil in a pan on medium flame.

     - Once the oil is hot enough, press the chakli maker directly over the hot oil in a circular motion to form spiral shaped chaklis. You can make them small or big as per your choice.

     Fry the chaklis in batches, taking care not to overcrowd the pan. Fry them on both sides until they become golden brown and crisp.

     - Using a slotted spoon, carefully remove the fried chaklis from the oil and place them on a kitchen paper towel to remove excess oil.


4.Repeat the process:

     - Continue shaping and frying the remaining dough in batches until all the chaklis are cooked.

     - Let the chakli cool completely before storing it in an airtight container. These will remain crunchy and fresh for many days.


5.Serve and Enjoy:

     When the chakli is cold and crispy, serve it as a snack with tea or coffee.

     - You can also pack these in lunchboxes or serve them as part of festive celebrations.

- Before frying chaklis, make sure that the oil is hot enough so that they do not absorb too much oil.
