Drumstick Leaves Curry (Moringa Leaves Curry) Recipe


Fixing:

- 2 cups young moringa leaves (drumstick leaves), washed and chopped

- 1 medium sized onion, finely chopped

- 2 tomatoes, finely chopped

- 2-3 green chillies, chopped lengthwise

- 1 tbsp oil (ideally mustard oil)

- 1 teaspoon cumin

- 1 teaspoon ginger-garlic gum

- 1/2 teaspoon turmeric powder

- 1 teaspoon coriander powder

- 1/2 tsp red bean stew powder (change as per taste)

- salt to taste

- Fresh coriander leaves for decoration


Guidance:


1.Plant Moringa Leaves:

     - Start by thoroughly washing the moringa passes under running water to eliminate any soil or contaminants.

     - After washing, chop the leaves finely and take them out. Dispose of any extreme stems.


2. Roasting Aromatics:

     - Heat oil in a vessel on medium flame. You can use mustard oil for real character.

     - Add cumin seeds in hot oil and let it splutter.

     Now add finely chopped onion to the dish and fry until it turns light brown.


3. Adding Flavor:

     When the onion caramelizes, add ginger-garlic paste to the pan and fry for a while until its raw smell goes away.

     - Add chopped green chillies and fry for one more minute.

     - Presently, is the ideal time to add the dry flavors – turmeric powder, coriander powder, and red bean stew powder. Mix well to incorporate into the onion mixture.


4. Cooking Tomatoes:

     - Add finely chopped tomatoes to the pan and cook until they become soft and tender and the oil starts separating from the spices. This usually requires about 5-7 minutes.


5. Integrating Moringa Leaves:

     When the tomatoes are cooked, add the chopped Moringa passes to the pan.

     - Mix well to coat the leaves with the spice mixture.

     - Sprinkle salt as per taste and mix completely.


6. Stewing:

     - Lower the intensity, cover the dish with a lid, and let the moringa leaves cook for about 8-10 minutes or until they are tender. Mix from time to time to prevent clumping.


7. Final Touch:

     - Once the moringa leaves are cooked, remove the lid and check for doneness. Adjust salt and taste if necessary.

     - Switch off the flame and place the drumstick curry in a serving dish.

     - Garnish with newly cut coriander leaves for freshness and taste.


8. To serve:

     Drumstick leaves curry goes well with hot roti or boiled rice. Serve it hot for best taste and flavour.
