Fixing:

1. 2 cups wheat flour

2. 1/4 cup semolina

3. 1/4 cup ghee (clarified spread)

4. 1/4 cup curd

5. 1/2 teaspoon baking powder

6. 1/4 tsp baking pops

7. Touch of saffron threads

8. 1 tbsp warm milk

9. 1/2 cup powdered sugar

10. 1/4 cup chopped nuts (almonds, cashews, pistachios)

11. 1/4 teaspoon cardamom powder

12. Ghee for frying


Guidance:


1. Saffron Planting:

     - First of all, gently crush the saffron threads with your fingers and soak them in hot milk. Let the saffron dissolve in the milk, giving it its deep color and aroma. Put it away for some time in the future.


2. Blending the Batter:

     - In a large mixing bowl, combine the wheat flour, semolina, baking powder, baking pops, powdered sugar, cardamom powder and chopped nuts.

     - Gradually add ghee to the dry ingredients and mix well until the mixture resembles breadcrumbs.

     - Now, add the saffron milk and curd to the mixture, stir gently to make a smooth mixture. Add more milk if necessary to get the right consistency.

     - Cover the batter with a wet cloth and leave it for 15-20 minutes, so that the flavors mix together.


3. Molding Lights:

     - After the resting period, divide the batter into equal sized pieces and shape them into round balls. Slightly flatten each ball to form small circles or patties.

     - Using your thumb, make a small indentation in the center of each bati. This will help them cook evenly and keep any toppings intact.


4. Roasting Lights:

     - Heat ghee in a deep pan or pan on medium flame.

     - When the ghee is hot enough, gently add the prepared batis, taking care not to pack the pan.

     Fry the batis in batches until they are shiny brown and fresh on the outside, turning them occasionally to ensure even cooking.

     - Once finished, remove the roasted batis using a slotted spoon and drain the remaining ghee on a paper towel.


5. Serving and Decorating:

     - Place the fried batis on a serving platter and garnish with additional saffron threads and chopped dry fruits for added flavour.

     - Serve Kesar Baati hot with your #1 backup, for example, spicy dal curry (dal) or spicy chutney.
