Fixing:

1. 2 cups khoya (mawa) decomposed

2. 1 cup sugar

3. 1/4 cup water

4. 1/2 teaspoon cardamom powder

5. 1 tbsp ghee (clarified spread)

6. A small bunch of chopped nuts (almonds, pistachios, cashews) for decoration


Step 1: Planning

Before you start making Mawa Barfi, make sure you have all the ingredients ready. If khoya is not present then strain it. Similarly, chop dry fruits finely for decoration.


Stage 2: Intensify Ghee

In a heavy lined dish or kadhai, heat ghee on medium intensity. Ghee adds extravagance and flavor to barfi.


Step 3: Add Khoya

When the ghee is hot, add scattered khoya into it. Keep stirring continuously to prevent it from sticking to the base and spoiling. Cook the khoya for about 5-7 minutes until it turns light brown and has a nutty smell.


Step 4: Prepare the Sugar Syrup

While the khoya is cooking, prepare the sugar syrup in a separate vessel. Mix sugar and water in the pan and put it on medium intensity. Mix until the sugar is completely dissolved.


Step 5: Cook the khoya with sugar syrup

When the syrup is ready and the khoya turns light brown, add the syrup to the khoya mixture. Be careful as it may explode. Mix continuously to combine the ingredients well.


Step 6: Add Cardamom Powder

Sprinkle cardamom powder into the mixture and mix once again. Cardamom adds wonderful aroma and flavor to the mawa barfi.


Stage 7: Cook until thickened

Continue cooking the mixture on low intensity while stirring continuously. Cook until the mixture thickens and starts leaving the sides of the container. This may take about 10-15 minutes.


Step 8: Shape the Barfi

When the mixture reaches the ideal consistency, transfer it to a greased plate or plate. Spread it evenly using a spatula to make an even layer. You can also use a flat-lined bowl to press and smooth the surface.


Step 9: Enhancement

While the mixture is still hot, sprinkle finely chopped dry fruits on the outer layer of the barfi. Press them gently so that they stick to the mixture.


Stage 10: Let it cool

Let the Mawa Barfi cool completely at room temperature. Once cooled, keep it in the refrigerator for about an hour to set.


Step 11: Cut into Pieces

After the barfi has frozen, take it out from the cooler and cut it into square or gem-shaped pieces with the help of a sharp blade.


Step 12: Serve and Appreciate
