1. 2 cups rice flour

2. ½ cup urad dal flour (dark gram flour)

3. 2 tbsp spread or ghee

5. 1 teaspoon sesame seeds

6. 1 teaspoon red bean stew powder

7. ½ teaspoon asafoetida

8. Salt as per taste

9. Oil for frying

10. Water depending on the situation

1.Preparing the dough:  In a large mixing bowl, combine the rice flour and urad dal flour. Add spread or ghee and mix well until it looks like breadcrumbs.

4.Fry to Perfection:  Fry the chaklis until they become shiny brown and fresh on both sides. Use a slotted spoon to remove them from the oil and place them on a paper towel to drain excess oil.

5.Cooling and Storage:  Allow the roasted chaklis to cool completely before transferring to a water/air resistant holder. These can be saved for a long time.

1.Consistency of the dough:  The batter should be of the right consistency – neither too soft nor too solid. Change the amount of water as needed.

2.Oil Temperature:  Make sure the oil is hot enough before frying the chaklis. If the oil is not hot enough, excess oil may remain in the chakli and it may become soggy.

3.Uniform thickness:  While making chakli, keep the approximate thickness so that there is no wear under any circumstances.
