Fixing:

To make about 2 cups of guava chutney, you will need:


4 prepared guavas, peeled and cut into pieces

1 tablespoon vegetable oil

1 teaspoon mustard seeds

1 teaspoon cumin

1 teaspoon fenugreek seeds

2-3 dry red chillies, break into pieces

1 teaspoon turmeric powder

1 teaspoon red bean stew powder (adjust as per taste)

1 teaspoon salt (as per taste)

1 cup sugar (can vary according to the taste of guava)

1/2 cup water

2 tbsp lemon juice

Fresh coriander leaves for decoration (optional)


Guidance:


1. Prepare Guava:

     Wash the guava thoroughly in running water.

     Peel the guava with the help of a blade or vegetable peeler.

     Cut the guava into small 3D square pieces and remove the seeds.


2. Treatment:

     Heat vegetable oil in a pan on medium intensity.

     Add mustard seeds in it and let it crackle.

     Then add cumin, fenugreek seeds and dry red chilli. Fry until fragrant, be careful not to overcook them.


3. Cooking Guava:

     Add the chopped guava to the dish and mix well with the tadka relish.

     Sprinkle turmeric powder, red stew powder and salt over the guava. Mix to consolidate.


4. Improving Chutney:

     Pour sugar over the guava and mix gently until the sugar starts breaking.

    Add water to the pot and stir to combine all the ingredients.


5. Stewing:

     Bring the mixture to a delicate stew on low intensity.

     Let the chutney cook while stirring occasionally, until the guava becomes soft and the mixture thickens and becomes chutney-like. This usually requires about 20-25 minutes.


6. Changing Taste:

     Taste the chutney and adjust the flavor if necessary. You can add more sugar for taste or more lemon juice for spiciness as per your wish.

     When the chutney reaches the ideal consistency, turn off the intensity.

     To improve the spiciness of the chutney, add lemon juice to it.


8. Decoration:

     Take out the guava chutney in a serving bowl.

     Garnish with fresh coriander leaves for a burst of variety and freshness.


9. To serve:

     Guava chutney can be served hot or at room temperature.

     It coordinates brilliantly with snacks like samosas, pakodas, or even spreads on sandwiches.

     You can also serve it as a side fixing to barbecued meats or as a dip for chips and snacks.


10. Keeping Away:

      Allow the chutney to cool completely before storing it in clean, sealed containers.

      Keep the guava chutney in the cooler for about fourteen days.
