Material:

To make Besan Gatte Ki Sabji, you will need the following ingredients:

For Gatte (Gram Flour Pakora):

- 1 cup gram flour

- 1/4 teaspoon turmeric powder

- 1/2 teaspoon red chili powder

- 1/2 teaspoon carom seeds

- salt to taste

- 2 tbsp oil

- water as required


For gravy:

- 1 cup curd

- 2 tbsp gram flour

- 1 tablespoon oil or ghee

- 1 teaspoon cumin

- 1/2 teaspoon asafoetida

- 1 teaspoon ginger-garlic paste

- 2-3 green chillies, finely chopped

- 1 onion, finely chopped

- 1 tomato, finely chopped

- 1/2 teaspoon turmeric powder

- 1 teaspoon coriander powder

- 1/2 teaspoon red chili powder

- 1/2 teaspoon garam masala

- salt to taste

- Fresh coriander for decoration


Instruction:


1. Prepare Gatte:

- Mix gram flour, turmeric powder, red chili powder, carom seeds, salt and oil in a mixing bowl.

- Gradually add water and knead a stiff dough.

- Divide the dough into equal parts and shape them into cylindrical rolls.

- Bring a large pot of water to a boil. Carefully drop the gattas into the boiling water and cook for about 10-12 minutes or until they float to the surface.

- Take out the cooked gatta from the water and let it cool. Cut them into small pieces and keep them aside.


2. Prepare the gravy:

- Mix curd and gram flour together in a bowl and beat until smooth. Cancel.

- Heat oil or ghee in a pan on medium flame. - Add cumin and asafoetida and fry.

-Add ginger-garlic paste and chopped green chillies. Fry for a minute.

- Add chopped onion to it and cook until it turns golden brown.

- Add chopped tomatoes to it and cook until soft.

- Add turmeric powder, coriander powder, red chilli powder and salt. Mix well and cook for another minute.

- Add prepared curd mixture into it and keep stirring continuously so that lumps do not form. Cook for 5-7 minutes until the gravy thickens.

- Add the chopped gatte pieces to the gravy and cook on low flame for 5-7 minutes, so that all the flavors get mixed together.

- Sprinkle garam masala on top and garnish with fresh coriander.


3. Serve:

- Take out the gram flour gatta curry in a serving dish.

- Serve with hot chapatti, paratha or boiled rice.


Tips:

- Make sure the gram flour dough for Gatte is firm but flexible. Adjust the amount of water accordingly.

Cook the gattes until they are completely cooked but still firm. Overcooking can make them mushy.

- To ensure that there are no lumps in the gravy, beat the curd and gram flour mixture well.

- Adjust the spice level as per your preference.

- To enhance the taste, you can also add dry fenugreek leaves (Kasoori Methi).
