Recipe: Paan Peda
Presentation:
Paan Peda is a delicious Indian sweet dish that combines various types of paan with milk solids (khoya) and sugar. It is a famous dish, especially during celebrations and festivals. The combination of sweet and refreshing flavors makes it an extraordinary and scrumptious dish.
Fixing:
500 grams khoya (milk solids)
1 cup powdered sugar
2-3 tbsp Gulkand (flower petal jam)
4-5 betel leaves
1 tablespoon fennel seeds
1 tablespoon chopped nuts (optional)
Silver leaf (varak) for decoration (optional)
Guidance:
1. Install the betel leaf:
Wash the betel leaves thoroughly under running water.
Wipe them using a paper towel.
Remove the middle vein from each betel leaf and chop it finely.
2. Set the filling:
Heat a non-stick dish on medium intensity.
Take out the khoya in the vessel and cook it for 5-7 minutes until it becomes slightly shiny and a nice smell starts coming from it.
Add powdered sugar to khoya and mix well until the sugar dissolves completely.
Add chopped betel leaves, gulkand, fennel seeds and chopped nuts (if using).
Cook the mixture for another 5-7 minutes until it thickens and starts leaving the sides of the dish.
Remove the heat from the dish and let the mixture cool to room temperature.
3.Shape the Peda:
When the mixture cools down, take small pieces of it and roll them into smooth balls.
Press each ball gently between your palms so that it becomes somewhat flat.
Whenever desired, decorate each peda with a silver leaf (varak) for a rich touch.
4.Service:
Place the paan peda on a serving plate.
You can serve them immediately or keep them in the fridge for 1-2 hours for a firmer surface.
Paan Peda can be kept in a sealed container in the cooler for up to seven days.
Tips:
Use newly washed and dried betel leaves for better taste.
Change the amount of sugar as per your taste.
If Gulkand is not available then you can take rose mixture or rose syrup instead.
Go ahead and try different things with different nuts like almonds, pistachios or cashews to add crunch and flavour.
To make pedas more delicious, you can dredge them in desiccated coconut or powdered sugar before serving.
