Kathal Kabab Recipe (Raw Jackfruit Kebab)


Jackfruit kebabs, also known as Kathal Kabab, are a delicious and enjoyable vegetarian alternative to the traditional meat kebabs. These kebabs are tender on the inside, fresh on the outside and full of flavour. They make a great canapé or snack for celebrations and family social events. This is how to make them step-by-step.


Kathal Kabab Recipe (Raw Jackfruit Kebab)


Ingredients:

For Kabab Mixture:

Raw Jackfruit: 500 gms (peeled and chopped into small pieces)

Chana Dal: ½ cup

Onion: 1 large (finely chopped)

Garlic: 5-6 cloves

Ginger: 1 inch piece

Green Chillies: 2-3 (as per taste)

New Coriander Leaves: 2 tbsp (finely chopped)

New Mint Leaves: 2 tbsp (finely chopped)

Garam Masala Powder: 1 tsp

Cumin Powder: 1 tsp

Coriander Powder: 1 tsp

Red Chilli Powder: ½ tsp (optional)

Black Pepper Powder: ½ tsp


Salt:  as per taste

For Binding:

Roasted Gram Flour:  2-3 tbsp

Bread Crumbs:  2 tbsp


For Moulding and Frying:

Sticks:  Optional (For making kebabs)

Oil:  for frying on low flame


Preparation:

1.Preparing jackfruit:

1.Wash and peel the jackfruit, remove its outer skin and seeds.

2.Cut the jackfruit into small pieces. Boil them in salted water for 10-15 minutes or till it becomes soft.

3.Drain the water and let the jackfruit cool down. After it cools down, mash it with the help of a fork or food processor. Keep aside.


2.Cooking chana dal:

1.Wash the chana dal thoroughly and soak it in water for 30 minutes.

2.Cook the dal in a pressure cooker or vessel till it becomes soft, but do not let it become mushy. Drain the excess water.


3.Preparing the Kabab Mixture:

1.Heat a tablespoon of oil in a pan and add garlic, ginger and green chillies and saute till a sweet aroma comes out.

2.Add cooked jackfruit and mix well. Let it cook for 2-3 minutes to remove excess moisture.

3.Add cumin powder, coriander powder, garam masala, red chili powder and black pepper. Mix well and cook for another minute.

4.Transfer the mixture to a bowl. Add cooked chana dal and mix them till you get a smooth consistency.

5.Add finely chopped onion, coriander leaves, mint leaves, cooked gram flour and bread crumbs. Add salt to vary the taste.


Shaping the Kabab:

1.Take a little portion of the mixture and shape it into a flat patty or a round ball.

2.In case of using a stick, roll the mixture around the stick to shape it into a round and hollow kabab.

3.Repeat the process again for additional mixing. Place the kebabs on the plate.


Cooking the kebabs:

Option 1:  Shallow frying

1.Heat the oil in a non-stick skillet over medium heat.

2.Gently place the kebabs in the skillet and cook until golden brown on all sides, turning occasionally.


Option 2:   Baking

1.Preheat your broiler to 180°C (350°F).

2.Place the kebabs on a baking plate lined with paper. Gently brush the oil over them.

3.Heat for 15-20 minutes, turning occasionally.


Option 3:  Air Frying

1.Preheat the air fryer to 180°C (350°F).

2.Apply enough oil on the kebabs and air fry for 10-12 minutes, turning occasionally.


Serving Suggestions:

Serve the Kathal Kebabs hot with:

Mint Chutney

Tamarind Chutney

Onion Rings and Lemon Slices

For better taste, sprinkle some chaat masala on the kebabs before serving.


Suggestions and Variations:

1.Texture:  Make sure the mixture is neither too wet nor too dry. Add breadcrumbs or gram flour at different times to get the ideal consistency.

2.Spice Level:  Vary the green chillies and red chilli powder as per your taste.

3.Vegan Options:  This recipe is generally vegan, but make sure your bread crumbs are dairy or egg-free.

4.Smoky Flavor:  For a smoky flavor, use the charcoal smoking technique. Place a piece of hot charcoal in a small bowl inside the kebab mixture, bathe in oil, and cover briefly before molding the kebab.
