Introduction:

Tinda Masala Sabzi is a famous North Indian dish made from apple gourd (also known as Indian round gourd or tinda) cooked in spicy, flavourful spices. It is a very easy dish for vegetable lovers and goes great with roti, paratha or rice. The delicate and tender tinda retains its aroma, making it a great part of any feast. Here is an easy recipe to make Tinda Masala Sabzi at home.


Tinda Masala Sabzi


Ingredients:


500 gm tinda, peeled and cut into quarters


2 tbsp oil


1 tsp cumin seeds


1 tsp mustard seeds


1 large onion, finely chopped


2 medium-sized tomatoes, finely chopped


2-3 green chillies, chopped


1 tbsp ginger-garlic paste


1 tsp turmeric powder


1 tsp red bean paste


1 tsp coriander powder


1 tsp cumin powder


1 tsp garam masala


Salt to taste


Chopped fresh coriander leaves for garnish


Instructions:


1.Preparation:


Wash the tinda thoroughly in running water. Peel them and cut them into quarters. Keep aside.


Finely chop the onion and tomatoes. Slice the green chillies lengthwise. If you are not using locally bought ginger-garlic paste then prepare it.


2. Cooking the Tinda:


Heat oil in a heavy pan on medium flame. When the oil is hot, add cumin seeds and mustard seeds. Let them crackle.


Add finely chopped onions and fry them till they turn golden brown. This will take around 5-7 minutes. Keep stirring occasionally to prevent burning.


Add ginger-garlic paste and green chillies. Fry for 2 minutes till the raw smell of the ginger-garlic paste disappears.


3. Making the Masala:


Add chopped tomatoes to the pan. Cook them till they turn soft and pulpy. This will take around 5-6 minutes.


When the tomatoes are cooked, add turmeric powder, red chilli powder, coriander powder and cumin powder to it. Mix well and cook the masala for 2-3 minutes till the oil starts separating from the masala.


4. Adding the Tinda:


Add the chopped Tinda to the pan. Mix the Tinda pieces well with the masala.


Add salt to taste and mix once again to mix everything well.


5.Cooking the Sabzi:


Cover the pan with a lid and lower the heat. Let the Tinda cook in its own juice for about 15-20 minutes. Keep stirring at intervals to cook evenly and avoid overcooking. If needed, you can sprinkle some water to prevent the masala from burning.


Pierce the Tinda with a fork or blade to check its doneness. It should be soft and tender.


6.Final Step:


Once the Tinda is cooked, sprinkle garam masala over the sabzi. Mix well and cook for 2 more minutes.


Switch off the heat and garnish with freshly chopped coriander leaves.


Serving Suggestions:


Tinda Masala Sabzi is best served hot with Indian breads like roti, chapati or paratha. It can also be served with steamed rice or jeera rice. You can also have curd or cucumber raita for dinner.

Spiciness:  Change the amount of green chilies and red chili powder according to your taste.


Spiciness:  If you like spicy flavor, you can add a teaspoon of aamchur (dry mango powder) or lemon juice at the end of cooking.


Consistency:  If you like a saucy curry, you can add a little water while cooking the tinda to get the ideal consistency.


Additional Vegetables:  You can also add other vegetables like potatoes or peas to this curry for extra coverage and flavor.
