1. 4 large capsicum (ringer peppers), ideally with flat bottom for firmness.

2. 2 medium sized potatoes, boiled and mashed.

3. 1 cup paneer (curd), cut into pieces.

4. 1 medium sized onion, finely chopped.

5. 2 green chillies, finely chopped.

6. 1 teaspoon ginger-garlic gum.

7. 1 teaspoon cumin.

8. 1 teaspoon coriander powder.

9. 1/2 teaspoon turmeric powder.

10. 1/2 teaspoon garam masala.

11. Salt as per taste.

12. 2 tbsp cooking oil.

13. Fresh coriander leaves for decoration.


For the sauce (optional):

1. 2 medium sized tomatoes, finely chopped.

2. 1 onion, finely chopped.

3. 1 teaspoon ginger-garlic gum.

4. 1/2 teaspoon cumin.

5. 1/2 tsp red stew powder.

6. 1/2 teaspoon turmeric powder.

7. 1/2 teaspoon garam masala.

8. Salt as per taste.

9. 1 tbsp cooking oil.


Guidance:


1.Preparation of Capsicum:

     - Wash the chime peppers thoroughly under running water and wipe them with a kitchen towel.

     - Carefully cut off the highest points of the chime peppers and remove the seeds and white layers from within. Make sure not to cut the peppers into pieces; They must remain in one piece to hold the filling.

     - Wash the empty chime peppers occasionally and keep them away.


2.Preparation for filling:

     - Heat 2 tablespoons cooking oil in a pot over medium heat.

     - Add cumin seeds in hot oil and let it splutter.

     Now add finely chopped onion and green chillies into the container. Fry until onion becomes clear.

     - Add ginger-garlic gum and fry for another minute until the raw smell disappears.

     - Add pureed potatoes to the mixture and mix well. Cook for 2-3 minutes.

     - Add chopped cheese, coriander powder, turmeric powder, garam masala and salt. Mix everything completely and cook for 3-4 minutes more.

     - Turn off the flame and let the stuffing mixture cool down to some extent.


3.Ringer Pepper Stuffing:

     - Take each empty chime pepper and fill them generously with the pre-arranged combination. Gently press the stuffing inside, ensuring the chili is evenly filled.

     - When all the peppers are filled, secure the tops back onto them.


4.Cooking Stuffed Capsicum:

     - Heat one tablespoon of oil in a wide container on medium intensity.

     - Carefully place the stuffed chime peppers in the dish, making sure they stand firmly in place. Cook them for 3-4 minutes, so that the bottom gets charred and a light shiny crust forms on the outside.

     - Once the fries are cooked, reduce the heat, cover the container, and let the chili cook for 10-12 minutes. Be sure to turn the chili periodically to ensure even cooking.

     When the ringer peppers are soft and cooked, remove them from the pan and transfer to a serving plate.


5.Preparing the sauce (optional):

     -In the same pan used to cook ringer chili, add a tablespoon of oil as needed.

     - Add cumin seeds in hot oil and let it splutter.

     - Add finely chopped onions to it and fry until it turns light brown.

     -Mix ginger-garlic gum and fry for some time.

     - Add chopped tomatoes along with red bean stew powder, turmeric powder, garam masala and salt. Cook the mixture until the tomatoes become soft and oil starts separating from the sides.

     - When the sauce reaches an ideal consistency, turn off the heat.


6.Service:

     Place the cooked stuffed chime peppers on a serving plate.

     - Pour the pre-prepared sauce over the stuffed peppers for added flavor and moisture.

     - Garnish with newly plucked coriander leaves.
