  • 2 tablespoons Oil
  • ½ teaspoon Turmeric Powder (Haldi)
  • ½ teaspoon Salt

For the Masala:

  • 1 Medium-sized Onion – finely chopped
  • 2 Medium-sized Tomatoes – finely chopped or blended
  • 4-5 Garlic Cloves – minced
  • 1-inch piece Ginger – grated
  • 2 Green Chilies – slit
  • ½ teaspoon Cumin Seeds (Jeera)
  • ½ teaspoon Mustard Seeds (Rai) (optional)
  • 1 teaspoon Coriander Powder (Dhania Powder)
  • ½ teaspoon Red Chili Powder (adjust as per taste)
  • ½ teaspoon Turmeric Powder (Haldi)
  • ½ teaspoon Garam Masala Powder
  • ½ teaspoon Amchur (Dry Mango Powder) or Lemon Juice
  • Salt to taste
  • 2 tablespoons Chopped Fresh Coriander Leaves
  • ¼ cup Water (for gravy)

Step 1: Preparing the Parwal and Potatoes

  1. Wash the parwal thoroughly under running water to remove any dirt.
  2. Peel the parwal lightly and slice them into halves or quarters lengthwise.
  3. If using potatoes, peel and dice them into small cubes.
  4. Heat 1 tablespoon oil in a pan and add the parwal pieces. Sauté them with a pinch of salt and turmeric powder for 5-7 minutes until slightly golden.
  5. Remove the parwal from the pan and set them aside. If using potatoes, sauté them in the same way and keep them aside.

Step 2: Preparing the Masala Base

  1. Heat another tablespoon of oil in the same pan.
  2. Add cumin seeds and mustard seeds (if using). Let them splutter for a few seconds.
  3. Add chopped onions and sauté until they turn golden brown.
  4. Add minced garlic, grated ginger, and green chilies. Sauté for another minute until the raw aroma disappears.
  5. Add chopped tomatoes and cook on medium flame until they turn soft and mushy. Stir occasionally.
  6. Now, add coriander powder, red chili powder, turmeric powder, and salt. Mix well and cook until oil separates from the masala.

Step 3: Cooking the Parwal Sabzi

  1. Add the sautéed parwal and potatoes to the prepared masala. Mix well so that the masala coats the vegetables evenly.
  2. Cover the pan and cook on low-medium heat for 5-7 minutes. Stir occasionally to prevent burning.
  3. Add ¼ cup of water if you want a slightly moist sabzi. If making a dry version, you can skip adding water.
  4. Cover and cook until the parwal and potatoes become tender. This should take about 10-12 minutes.
  5. Once cooked, sprinkle garam masala and amchur powder (or lemon juice). Mix well.

  1. Garnish with freshly chopped coriander leaves.
