1. 1 medium sized bottle gourd (about 1.5 kg)

2. 4 cups sugar

3. 2 cups water

4. 1 teaspoon slaked lime (calcium hydroxide)

5. A speck of alum (discretionary)

6. 1 teaspoon cardamom powder

7. A few threads of saffron (optional)

8. Rose water or kewra water for seasoning (optional)

9. Edible Food Tone (Discretionary)

10. Silver work (silver leaf) for decoration (optional)



Guidance:


1. Selection of Debris Gourd:

     To make petha, choose hard, blemish-free bottle gourd. The gourd should be new and free from any cuts or injuries.


2. Removing and installing debris:

     - Wash the gourd thoroughly under running water to remove any soil or dirt.

     - Peel the bottle gourd using a sharp blade or vegetable peeling tool.

     - Cut the grated bottle gourd lengthwise into equal parts and take out the seeds with the help of a spoon.

     - Cut the bottle gourd into uniform, small pieces or into desired shapes. Traditionally, petha is cut into rectangular or semiprecious stone shapes.


3. Treatment of gourd debris:

     - Dissolve slaked lime in enough water so that the gourd pieces are completely immersed.

     Soak the gourd pieces in slaked lime solution for 12-15 hours or for some time. This chakra helps to provide the trademark clear surface to the petha.

     - After soaking, rinse the remaining gourd pieces thoroughly under running water to eliminate any traces of lime.


4. Heating gourd debris:

     - In a giant vessel, move the water to a moving bubble.

     - Put bottle gourd pieces in boiled water and whiten them for 4-5 minutes.

     - Drain the whitened bottle gourd pieces and put them in cold water to stop the cooking process. put away.


5. Setting of Sugar Syrup:

     - Mix sugar and water in a separate vessel and put it on medium intensity.

     - Mix the mixture until the sugar dissolves completely.

     - Add a pinch of alum in the syrup. Alum helps in keeping the petha straight.

     - Continue cooking the syrup until it reaches the consistency of a string. To test the consistency, take a limited amount of syrup between your thumb and pointer. When the fingers are delicately pulled apart, it should form a single string.


6. Cooking bottle gourd in sugar syrup:

     - Add finely chopped bottle gourd pieces in sugar syrup.

     Cook the bottle gourd pieces in sugar syrup on low flame while stirring occasionally.

     - Keep cooking until the gourd pieces become clean and the syrup thickens and becomes like two strings.


7. Increase Petha:

     - To increase the syrup, add cardamom powder and saffron threads to it. You can also add rose water or kewra water to it for better aroma.

     - Whenever needed, add a few drops of delicious food tone to give the petha an energetic color. However, this step is entirely discretionary.


8. Let the petha cool:

     - When the gourd pieces are clean and evenly covered with sugar syrup, turn off the intensity.

     - Let the petha cool to room temperature before serving.


9. Serving and Garnishing:

     - Take out the cooled petha with syrup in a serving plate.

     - Optionally, decorate the petha with silver work (silver leaf) for a better touch.

     - Serve Agra Petha as a luxurious pastry or sweet dish, ideal for any event.
