- Mustard seeds - 2 tbsp

- Turmeric powder - 1 teaspoon
- Red stew powder - 2 tbsp
- Asafoetida - 1/2 tsp
- Salt - 2 tablespoons (change as per taste)
- Jaggery or sugar - 2 tbsp
Mustard oil – 1/2 cup
- Vinegar - 1/4 cup
- Garlic cloves - 5-6 cloves
-Ginger - 1 inch piece
- Curry leaves - a small bunch

1. Set up the drumsticks:
- Wash the drumsticks thoroughly and wipe them with a kitchen towel.
- Trim the edges of the drumsticks and cut them into 2-inch pieces. If any sinuous wire is present, remove it.
2. Dry food and taste buds:
- Heat a pan on medium flame and dry mustard, fenugreek seeds and fennel in it till aroma comes out. Allow them to rest.
Once cooled, take the cooked flavors to a processor and crush them into a coarse powder.
3. Install Masala Gum:
- Peel and break ginger and garlic cloves.
- In a blender or mortar and pestle, add ginger, garlic and some curry leaves. Grind them and make a soft gum.

- Heat mustard oil in a container until it reaches its smoking point. Turn off the intensity and let it cool down somewhat.

When the oil cools down a bit, add asafoetida and ground peel powder to it. mix well.

Now add turmeric powder, red stew powder and salt to the dish. Mix everything together and cook for one more minute.

- Add the chopped drumsticks to the dish and mix them well with the flavor combination.
9. Add vinegar and jaggery:
- Pour vinegar over drumstick and sprinkle jaggery or sugar on top. Mix everything together.
10. Cook:
- Cover the dish and let the drumsticks cook on low flame for about 10-15 minutes or until they are tender but not tender.

- When the drumsticks are cooked, check for doneness and adjust the level of salt or flavor as per your taste.
12. Cool and Store:
- Allow the pickle to cool completely before storing it in a clean, clear glass container.
