Step 1: Making Rasgullas
1.Cutting the Milk: Heat the milk in a large vessel. When it starts bubbling, reduce the intensity and add the lemon juice mixture while stirring slowly. The milk will turn sour and you will see the whey separating from the curd. If the milk does not curdle completely then add a little more lemon juice to it.
2.Straining the curd: Empty the coagulated milk into a strainer made of muslin. Rinse the curd under cold running water to remove the harshness of the lemon juice. Gather the edges of the material and press carefully with abundant water. Let the contents equilibrate for about 30 minutes to allow any excess whey to drain away.
3.Kneading the chhena: After 30 minutes, take out the chhena (curd) in a plate and rub it with the impact point of your palm for about 10 minutes until it becomes smooth and free from lumps May it not happen.
