Cabbage Aloo Sabzi Recipe
Cabbage Aloo Sabzi, or Cauliflower and Potato Stirfry, is a classic Indian vegetarian dish. It is a simple, tasty and healthy recipe that goes great with chapati, paratha or rice. This dish is commonly made in Indian households as it is easy to make and tastes amazing. Here is a detailed recipe for making Cabbage Aloo Sabzi.
Ingredients
Main Ingredients:
2 cups chopped cabbage
2 medium-sized potatoes, peeled and chopped into pieces
1 medium-sized onion, finely chopped
1 medium-sized tomato, chopped
12 green chillies, finely chopped (optional)
Spices:
1 teaspoon cumin seeds
1/2 teaspoon mustard seeds
1/4 teaspoon asafoetida
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
1/2 teaspoon coriander powder
1/2 teaspoon cumin powder
1/2 teaspoon garam masala
Salt to taste:
Other Ingredients:
2 tablespoons cooking oil
Chopped fresh coriander leaves for garnishing
1/4 cup green peas (optional)
Instructions:
1. Preparation:
Finely chop the cabbage and keep aside.
Peel the potatoes and chop them into small pieces.
Chop the onion, chop the tomato and green chillies.
2. Cooking the Vegetable:
Heat 2 tbsp oil in a pan or kadhai on medium flame.
Add cumin seeds and mustard seeds, let them crackle.
Add a pinch of asafoetida and fry for a few seconds.
Add chopped onions and green chilies. Saute till the onions turn translucent.
Add chopped potatoes and mix well. Cover the pan with a lid and cook on medium flame for 57 minutes till the potatoes are partially cooked. Keep stirring occasionally to prevent sticking.
Now, add chopped tomatoes and cook till they turn soft.
3. Adding Cabbage and Spices:
Add chopped cabbage to the pan and mix well.
Sprinkle turmeric powder, red chili powder, coriander powder, cumin powder and salt. Mix everything well.
Cook on medium flame for 10-12 minutes, stirring occasionally, till the cabbage and potatoes turn soft. If you are using green peas, add them at this stage and mix well.
4. Final Step:
When the cauliflower and potatoes are cooked, add garam masala and mix well.
Garnish with fresh coriander leaves and give it a last stir.
5. Serving:
Serve the cauliflower aloo ki sabzi hot with chapatis, parathas or rice.
Tips:
For a tangy flavour, you can add a teaspoon of lemon juice or aamchur powder (dry mango powder) before serving.
You can also add a few garlic cloves or grated ginger to the onions while sautéing them.
