Recipe for Zucchini Sabzi (Indian Zucchini Sabzi)

1. Wash the ridge gourd thoroughly and peel it with a peeler machine. Cut it into small pieces and keep aside.

4. Add ginger-garlic paste and green chilli and mix. Fry for a minute until the raw aroma disappears.

6. Now add turmeric powder, coriander powder, red chilli powder and salt. Mix well and cook the masala for a few minutes until the oil starts separating from the masala.
7. Add chopped ridge gourd pieces to the pan and mix with the spices.
8. Cover the pan with a lid and let the ridge gourd cook on low to medium flame. Stir occasionally to prevent sticking.
9. Cook until ridge gourd becomes soft and tender. This may take about 10-15 minutes.
10. When the ridge gourd is cooked, sprinkle garam masala over the vegetable and mix well.
11. Garnish the zucchini curry with freshly chopped green coriander.
12. Switch off the flame and take out the curry in a serving dish.
