Jackfruit Masala Curry Recipe

Ingredients:
For Jackfruit:
Raw Jackfruit: 500 gms (cut into small pieces)
Turmeric Powder: ½ tsp
Salt: ½ tsp
Water: for boiling
For Masala Sauce:
Oil: 3 tbsp
Cumin seeds: 1 tsp
Bay Leaf: 1
Cinnamon: 1 inch piece
Green Cardamom: 2 cans
Cloves: 3-4
Onions: 2 medium size (finely chopped)
Tomatoes: 3 medium size (pureed)
Ginger-Garlic Paste: 1 tbsp
Green Chillies: 2 (chopped) hui)
Turmeric Powder: ½ tsp
Red Bean Stew Powder: 1 tsp
Coriander Powder: 2 tsp
Garam Masala: 1 tsp
Kasuri Methi (Dried Fenugreek Leaves): 1 tsp (crushed)
New Cream or Yogurt: 2 tbsp
Salt: To taste
Water: As required
For Garnishing:
New Coriander Leaves: 2 tbsp (chopped)
Preparation:
Step 1: Prepare Jackfruit
1.Peel the jackfruit and cut it into small pieces Peel the jackfruit. Do not forget to apply oil on your hands and the blade, as jackfruit can be sticky.
2.Add water, jackfruit pieces, turmeric powder and salt in a large vessel. Boil till the jackfruit becomes soft. This should take about 10-12 minutes.
3.Strain the water and keep the chopped jackfruit aside.
Step 2: Prepare the masala base
1.Heat 3 tbsp oil in a deep pan or kadai on medium flame.
2.Add cumin seeds, cow leaf, cinnamon stick, green cardamom and cloves. Saute till they start emitting fragrance.
3.Add chopped onions and cook till they turn bright brown. Mix regularly to avoid burning of the food.

3.Add about 1 to 1.5 cups of water depending on how thick you want the sauce to be. Mix well.
4.Cover the pot and let the curry cook for 10-12 minutes on low-medium intensity. This will allow the jackfruit to absorb the spices.
5.Add garam masala, crushed kasuri methi and cream or yogurt. Mix well and cook for 2-3 minutes.
Preparation Steps:
1.Taste carefully and adjust salt if needed.
2.Garnish the curry with freshly chopped coriander leaves.
