  • 1 teaspoon salt
  • 1 teaspoon red chili powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon ginger-garlic paste
  • ½ teaspoon garam masala

For Green Paste (Hara Dhaniya Masala):

  • 1 cup fresh coriander leaves (cilantro)
  • 5-6 green chilies (adjust as per taste)
  • ½ inch ginger
  • 4-5 garlic cloves
  • 2 tablespoons water (to blend)

For Curry:

  • 2 tablespoons oil or ghee
  • 1 bay leaf
  • 1 cinnamon stick
  • 2 green cardamoms
  • 1 large onion (finely chopped)
  • 1 large tomato (pureed)
  • ½ teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • ½ teaspoon black pepper powder
  • ½ teaspoon garam masala
  • ½ teaspoon kasuri methi (dried fenugreek leaves)
  • ½ cup water
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

Step 1: Marinate the Chicken

  1. Wash the chicken pieces thoroughly and pat them dry with a kitchen towel.
  2. In a bowl, add the chicken, curd, salt, red chili powder, turmeric powder, ginger-garlic paste, and garam masala.
  3. Mix everything well so that the chicken is well coated with the marinade.
  4. Cover the bowl and refrigerate for at least 30 minutes (or overnight for better flavor).

Step 2: Prepare the Green Masala Paste

  1. Take fresh coriander leaves, green chilies, ginger, and garlic in a blender.

  11. Crush some kasuri methi between your palms and add it to the curry for extra aroma.
  12. Finally, sprinkle garam masala and give it a final mix.
