Hara Dhaniya Masala Bhindi Recipe (Green Coriander Spiced Okra)
Hara Dhaniya Masala Bhindi is a flavorful North Indian dish that combines fresh green coriander (hara dhaniya) with tender okra (bhindi) and aromatic spices. Ingredients:

For the Bhindi (Okra):
- 250 grams bhindi (okra), washed and dried
- 2 tablespoons oil
- ½ teaspoon cumin seeds (jeera)
- ½ teaspoon mustard seeds (rai)
- 1 green chili, finely chopped
- ½ teaspoon turmeric powder (haldi)
- ½ teaspoon red chili powder (lal mirch)
- ½ teaspoon coriander powder (dhaniya powder)
- ¼ teaspoon garam masala
- Salt to taste
For the Hara Dhaniya Masala Paste:
- ½ cup fresh coriander leaves (hara dhaniya), finely chopped
- 3-4 garlic cloves
- ½ inch ginger
- 2 green chilies
- 1 teaspoon lemon juice
- 1 teaspoon fennel seeds (saunf)
- 1 teaspoon roasted cumin powder (bhuna jeera powder)
- 1 tablespoon curd (yogurt) (optional, for extra creaminess)
Preparation:
Step 1: Preparing the Bhindi (Okra)
- Wash the bhindi thoroughly under running water.
- Pat them dry completely using a kitchen towel. It is important to dry them well to prevent stickiness while cooking.
- Trim the ends and chop the bhindi into 1-inch pieces.
Step 2: Making the Hara Dhaniya Masala Paste
- In a mixer grinder, add fresh coriander leaves, garlic cloves, ginger, green chilies, fennel seeds, roasted cumin powder, lemon juice, and curd (if using).
- Grind everything into a smooth paste without adding water.
- Keep this paste aside.
Step 3: Cooking the Bhindi
- Heat 2 tablespoons of oil in a pan on medium heat.
- Add cumin seeds and mustard seeds. Let them splutter.
- Add chopped green chili and sauté for a few seconds.
- Add chopped bhindi and mix well.
- Stir-fry on medium heat for 5-7 minutes until the bhindi is slightly cooked and starts turning soft.
- Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
- Cook for another 5 minutes on low-medium heat, stirring occasionally.
Step 4: Adding the Hara Dhaniya Masala
- Once the bhindi is almost cooked, add the prepared hara dhaniya masala paste.
- Mix well so that the bhindi gets coated evenly with the masala.
- Cook for 3-4 more minutes on low heat, allowing the flavors to blend.
- Sprinkle garam masala and mix again.
Step 5: Final Touch & Serving
- Turn off the heat and let the bhindi rest for a minute.
- Garnish with some more chopped fresh coriander leaves for extra flavor.
- Serve hot with roti, paratha, or dal-rice.
